Hi friends! Today I have a super yummy recipe that I will definitely be making again this week… they were THAT good. I made Extra Cheesy Chicken Enchiladas and it takes a while to actually cook the chicken, but it’s pretty much just like set it and forget it! You can even make this in the crock pot and eat as shredded chicken tacos as well, if you might happen to be a little too lazy to actually roll these, hey, I won’t judge! Super num-i-ness ahead:

How To: Oven Roasted Brussel Sprouts

I love Love LOVE brussel sprouts. But, you already know that about me. Lately hubby and I have been trying to eat a little healthier. So, I tried roasting those little cuties in the oven instead of making my famous (haha) pan seared brussel sprouts. These came out oh so tasty with just a fraction of the fat I use to make the pan seared version. So YUM!

Ready for today’s recipe?! I have a very easy lasagna recipe to share today. I love this recipe because there is no need to fuss over boiling long pasta noodles before hand. You just layer, bake and eat! I also love this because the longer it sits the better it gets and you can eat off it for days!

Howdy, ya’ll! Today I have for you my recipe for Collard Greens. I made these the for the first time about a year ago and came out fantastic. These are by far better than anything you can get at a restaurant. Or, any restaurant that I have had them at, that is. Normally when I order them they end up coming out well, flavorless. Even at one of my favorite southern restaurants, Cracker Barrel where you would think they would nail this one. Now, no offense to any of you’s that like this sorta thing, it just isn’t what I fancy. So here I have a flavorful Southern staple my way:
