Summer is right around the corner! I love summer cocktail recipes because they are just so fresh, light, and crisp and these Melon Cocktails are no exception – the perfect drink.
Melon has always been my favorite fruit.
When I was little, my Grandma Helen would dice up watermelon for me, and I would devour it faster than she could cut it up. I still love it just as much today.
I wanted to incorporate melon with one of my favorite summer (or anytime!) drinks, prosecco. Making a fun watermelon cocktail recipe pairing the two would be the perfect beverage to sip on a hot summer day.
If you want to REALLY impress your guests at your next summer party, make your melon balls ahead of time and freeze them. BOOM, instant melon ice cubes to keep your refreshing cocktail perfectly chilled.
Do you like honeydew or another melon more than watermelon? I think fresh honeydew melon is my second favorite.

- Sugar
- Water
- Fresh Watermelon
- Prosecco
- Melon for garnish – I use a melon baller for this
HOW TO MAKE PROSECCO MELON COCKTAILS:
- Place water and sugar in a small saucepot. Dissolve the sugar in the water over medium heat, stirring occasionally.
- Bring to a simmer and add the watermelon cubes. Simmer for 20 minutes. Take off the heat and let cool completely. Strain through a mesh strainer.
- To make the cocktails, add 1-ounce watermelon syrup to a champagne glass.
- Add prosecco on top, gently stir with a spoon to combine with the prosecco. Garnish with melon balls if using.

I normally like to garnish with items that are in the cocktail itself, so I keep it simple with melon balls, but some other options include:

- Lime wedge or lime slices
- Watermelon slice
- Finely diced pieces of melon
- Maraschino cherry
WILL THIS WORK WITH OTHER FRUIT?
Yes, the syrup recipe is a general guideline for making fruity-flavored syrups. This works exceptionally well with berries and stone fruit.
HOW TO STORE:
Store leftover syrup in the fridge in an airtight container for up to 3 weeks.
Freeze for up to 3 months.
Place leftovers in the freezer in a freezer-safe container. To thaw, place the dish in the fridge overnight.
Or, do as I do and freeze it in ice cube trays to pop one out and add to beverages any time.
