Craving something decadent? Something salty, sweet and a touch spicy?? Well you have come to the right blog, my friends! Today’s recipe is over the top deliciousness and not for the faint of heart. I say if you want to splurge, then go all out!

One of my biggest treats I go for when I want something savory is BACON. And, I’m pretty sure I’m not alone.

As I have said many times before, Wright® Brand Bacon and I have been BFF’s for some time now. I love it. The Applewood Smoked flavor is my personal favorite but there are lots more like Hickory Smoked, Bourbon Barrel Smoked, Smoked Brown Sugar and Oak Barrel Smoked.

I picked up a package at Publix a few days ago, it is located in the refrigerated section by all the breakfast meats. I always keep Wright Brand Bacon in the fridge or freezer in case of emergencies. A bacon emergency. Yes, that exsists.

Sweet and Spicy Bacon Bombs, tater tots and pepper jack cheese wrapped in bacon and baked to golden brown!
Ingredients
  • 20 tater tots
  • 10 slices Applewood Smoked Wright Brand Bacon, cut in half
  • 20 pieces pepper jack cheese, thinly sliced to the size of a tater tot
  • ½ Cup light brown sugar
  • ½ teaspoon chipotle powder
Instructions
  1. Preheat oven to 400 degrees. Combine brown sugar and chipotle powder on a small plate. Roll tater tot with a piece of the cheese loosely with bacon. Roll entire thing in the brown sugar mixture.
  2. Place on a sheet tray about 1 inch apart. Bake for 18-20 minutes until golden brown.

Make sure they are loosely rolled in the bacon. The bacon will shrink during cooking and if they are too tightly wrapped they will smush the tots!

They have just a touch of spice but if you like extra spice, just amp up the amount of chipotle powder.

What I really love about Wright Brand Bacon is that it’s not just for breakfast. You can use it for literally every meal. I’m appetizer obsessed so I immediately think of that first. But, these bacon bombs would be great at parties, lunch or even dinner. Heck, there is basically a hash brown inside so yes, breakfast too!

    See these looking amazing but the last time I tried to make something like this, they turned out flat and oozy stuff was all over my cookie sheet.
    I think you need to come to my house and make them for me.
    I’ll have booze.

      LOL, In love with this comment. Oozy stuff does end up on the cookie sheet, but the flat part sounds like you may have rolled them too tightly. I suggest covering that cookie sheet in foil first and trying these again, so worth it!
