Easy Blueberry Smoothie, blueberries, bananas and yogurt make this an easy, healthy, fast breakfast option!

Mornings are a busy time in my household. And as we all know breakfast is the most important meal of the day. Getting a nutritious breakfast into the mouths of my children in a short amount of time is always my challenge.
My boys discovered they love smoothies and now request them for breakfast almost daily. I found an easy smoothie recipe that can be whipped up in five minutes that’s chock-full of protein, fiber and potassium. My kids prefer the fruits they love in the smoothies they drink. And they like to help blend it all up. Skip the protein powder and use Greek yogurt. Toss in your favorite sweet fruits, add a splash of fruit juice or milk and turn on that blender.
My kids like the consistency of a frozen, slushy smoothie. Freezing Greek yogurt will not change the beneficial cultures of the yogurt. I don’t thaw the yogurt completely, just until slushy. Perfect for a breakfast smoothie. I keep it simple. For this recipe I use vanilla Greek yogurt in the smoothies. I freeze the yogurt the night before. Then I let the container sit in a pan of hot water for about 5-10 minutes before chunking it up with a fork. An immersion blender is perfect for blending a healthy, quick breakfast and is easy to clean.
I like to use fresh fruit when it’s in season because it really tastes so much better than frozen. When I use frozen fruit it is typically the banana because it helps keep the smoothie slushy. If using frozen blueberries, use small wild blueberries. They blend better.
After blending, drink it up before your smoothie thaws completely.
Easy Blueberry Smoothie
Servings 1 serving
Ingredients
- 5 ounce container Greek vanilla yogurt frozen, then thawed overnight in the fridge
- 1/2 medium banana frozen for a thicker smoothie
- 1/3 cup fresh blueberries
- 3 large strawberries sliced
- Splash of milk
Instructions
- Using an immersion blender or blender, mix together the yogurt, banana and berries and slowly add in enough milk until slushy. Just make sure the yogurt is just thawed and slushy. Well blended pour into a glass and enjoy.
