Full of bacon, cheese, and BBQ Sauce these Monterey Chicken Sliders are a delicious lunch or dinner recipe that you can enjoy all year long.
So if you know anything about me then you know that I love to grill. We are in Florida so we are able to pretty much grill all year long without any problems.
One of the most popular recipes on my site is my Monterey Chicken! I wanted to revamp it a touch. Monterey Chicken Sliders are perfect for parties, lunch, dinner, or a quick snack!
The addition of bbq sauce and grilled onions gives a sweet touch I think this recipe needs. And trust me it really gave it the perfect amazing flavor.
I love sliders, they are smaller versions of larger sandwiches that you really can just have multiple of if you’d like. I may or may not have a little too many of these at once.
But there is absolutely no shame in that. These Monterey Chicken Sliders are super tasty and flavorful and you can really top them with whatever you like.
The base recipe really just makes it delicious as is or you can build off of it to create your favorite slider.

WHY THIS RECIPE WORKS:

INGREDIENTS NEEDED (FULL RECIPE BELOW):
Chicken breasts
Onion powder
Garlic powder
Kosher salt
Pepper
Red onion
Olive oil
Bbq sauce
Bacon
Small dinner rolls
Colby jack cheese
HOW TO MAKE MONTEREY CHICKEN SLIDERS:
- Slice the chicken breasts in half lengthwise. Cut the 4 pieces into half so you have 8 pieces. Season on both sides with garlic powder, onion powder, salt, and pepper. Place on a plate until ready to grill. Brush the onion slices with olive oil on both sides, set them aside on a plate.
- Cook the chicken over medium-high heat on the grill. Cook onions on the grill as well, get a nice sear on both sides. When the chicken is halfway done, about 5 minutes, flip over and baste with the bbq sauce. Flipping onions as necessary.
- When the chicken is almost done cooking, flip again and baste the other side with sauce. Place buns cut side down onto grill to get a light toast, take off when they are toasted, and set aside about 2 minutes.
- When the chicken has reached an internal temperature of 165 degrees, about 10-12 minutes, top with crumbled bacon and cheese. Take off the onions, close the grill and let the cheese melt, about 1 minute.
- Assemble the sliders by taking a bottom bun, add a piece of the chicken and the onions. Top with more bbq sauce if desired, and your favorite sandwich toppings, serve and enjoy!
How easy are these Monterey Chicken Sliders? I mean come on! How can you go wrong with bacon, bbq sauce, and cheese? You really can’t in my opinion.
DO I HAVE TO GRILL THESE?
These are best if they are grilled, if you don’t have access to a grill you can make them inside on your stovetop using a grill pan. This is what we do when the weather doesn’t cooperate.
You could bake your chicken breasts as well, to do this season, and place chicken on a sheet tray. Bake at 375°F. For 5-10 minutes until almost cooked through, baste with bbq sauce on both sides and bake until an internal temperature reaches 165°F, about 5 more minutes.
CAN I PUT THE BBQ SAUCE ON AS SOON AS I START GRILLING?
Don’t baste the chicken as soon as it hits the grill or else the sugars in the BBQ sauce will burn. And we don’t want that!
HOW TO STORE:
This Monterey Chicken Slider Recipe can be stored in an airtight container in the refrigerator for up to 3 days, this is just the chicken itself and not assembled sandwiches.
TIPS AND TRICKS:
- We like to use thick-cut bacon for this as it produces larger and thicker pieces so you can really taste it, but you can use regular cut if you like.
- Use your favorite BBQ Sauce for this recipe, we love using Brown Sugar Honey for a little bit of sweetness.
- Any dinner roll or slider bun will work, we are keen on using Kings Hawaiian for these.
- Top with your favorite toppings to really make this sandwich yours.
- Easily double this recipe to serve at any gathering or cookout.
