So, along with many of you, a new year means a new diet.. right?! Well, at least for Jeremy and I that’s how it is right now lol.

It’s not too bad so far. We are trying not do be obsessive with it, counting calories and such. Instead, we are eating better meals, less portions and cutting out sweets.

I really haven’t felt very deprived. It’s been just over half a week and I’m already down about 3 pounds. Cutting out all those holiday snacks sure has helped! LOL.

I’ve been trying to make and have on hand more healthy snacks. I’m a sucker for snacking. Especially mid-day or after dinner.

If it’s mid-day I will reach for some salty kettle cooked potato chips. UGH, they are my favs. But at night, of course I want something sweet and snack-y like puppy chow or chocolate covered pretzels or chocolate chips right out of the bag, you catch my drift…

I thought I would combine the two into a snack I can have at anytime. These baked honey crisp apple chips really have the best of both. They are crispy and sweet. AND delicious. You are literally concentrating the apple flavor, so it is like a burst of sweet deliciousness.

I personally went for the honey crisp apple variety because they are just my favorite. BUT, of course you can choose any variety of apple and they will still be super yum!

Baked Honey Crisp Apple Chips, thinly sliced and baked to a crispy, delicious, sweet and healthy snack!
Ingredients
  • 2 honey crisp apples
Instructions
  1. Preheat oven to 275 degrees. Rinse off apples and dry. Cut in half crosswise and using a melon baller, scoop out the seeds and core. Using a mandolin on the second to thinnest setting, CAREFULLY slice apples (use the handgard why dontcha?!) into rounds. Or, cut verrrry thin with a knife.
  2. Place on cookie sheet and bake for 30 minutes. Flip over and bake an additional 30 minutes or until apple slices are dried out but not brown!
  3. Let cool, enjoy!

When you make these pretty please use the handgard if you use the mandolin, at least just for me. My Chef anxieties are coming back!

So, like many recipes, I had a slight problem with these. Don’t freak out, yes I know what I’m doing, totally fixable. The apples pictured are ah-mazing. Yummy yum yums. BUT, what my brain told me to do was to put three cookie/sheet trays in the oven all at the same time.

Yup.

The tray on the second to top rack of the oven came out beautifully, pictured above.

The other two, on a lower rack, two from the bottom, burnt to heck. So, a lil tip from me to you, make these beauties in batches, aight? You can still slice all your apples, just place them in cold water with a squeeze of lemon and keep them in the fridge until the first batch is ready.

Also, if you start to smell apples and then start to smell burning apples… go check the oven. *eye roll*

Anyways, I hope you liked my healthy snack! AND, I hope you don’t hate me for sharing a healthy snack and not red velvet pancakes! Oh wait, that’s next week… 😉

      I used my oven, you have to watch them extremely closely. I even mentioned in the post I had a slight problem as well.

        Yeah I saw it too.. But yours came out quite perfect.. Mine starts with the apple shrink then the skin started to get burn and slowly whole piece burned.. I’m wondering if I should not use convection function for baking this chips

          That’s weird. Yes, give that a try it should be more even. Sorry you have to go through this, I’d love to know if the convection works!
