What’s better for this time of year than easy, fast recipes? We are all going nuts getting ready for the holidays and the last thing I want to do is be in the kitchen slaving for hours on multiple days! Sometimes I just want to say the heck with it and pick up a Mrs. Smith’s pie and some cool whip for dessert and call it a day. But, having that over and over, while delicious can get a little bit boring, right? Well, today I have for you a super fun, fast and mouth watering alternative; Cherry Pie Mousse!

While at Walmart doing my weekly shopping trip, I noticed the Mrs. Smith’s pies on one of the frozen aisle end caps. The Cherry Pies were calling my name so I picked one up along with two cartons of Cool Whip, you can never have enough of that stuff during the holidays! (And they were really stocked up as well, lol!)

I got home and whipped up this recipe. It is soooo easy, I cannot stress that enough! And, quite elegant looking if I do say so myself, no one will know it isn’t homemade!

Cherry Pie Mousse
 
 
Before making this recipe, let pie sit in fridge over night to thaw.
Ingredients
  • 1 Mrs. Smith's frozen Cherry Pie
  • 2 Tbls unsalted butter, softened
  • 1 Tbls granulated sugar
  • 8 oz Cool Whip (plus more for garnish if desired)
Instructions
  1. Preheat oven to 350 degrees.
  2. Remove pie crust top from pie. Place in food processor with butter and sugar. Pulse until pie crust breaks up, it might form a ball and that's okay. On a baking sheet lined with parchment paper (or a silicone mat like pictured) lay out little dollops of the pie crust mixture. Place in the oven for 10 minutes or until crust turns a golden brown. Take out of the oven and let cool completely.
  3. Scoop out cherry pie filling and place in food processor (or blender) and blend until smooth. Place in a medium bowl and add the Cool Whip. Gently fold the two together until combined.
  4. Pipe into glasses and top with pie crust crumbles. Add a dollop of Cool Whip and more crumbs for garnish, if desired. Serve and enjoy!
