Beer Battered Fish, flaky white fish is dipped in a beer battered made from pancake mix and flash fried, a simple yet delicious weeknight meal!
I love seafood. Capital L LOVE it! I probably could be a pescatarian and then I remember that I love steak too. And fried chicken… oh, oh and pork chops!
Okay, I’m getting a little ahead of myself here but yes, fish and seafood and me are a match made in Heaven. But, oddly enough I rarely make it at home. I KNOW!
So, I decided now was the time to experiment and get some more fish in our diet. I’ve had this box of Bisquick in the pantry for a little while, it’s a huge one and I’ve already made Chocolate Chip Pancakes Cupcakes with it and good old pancakes for breakfast many times.
I’ve heard that you can use pancake mix, Bisquick, in particular, to batter and fry stuff so I said why not?! I gave it a shot and O. M. Geeee! SO GOOD you guys! I know it sounds a little crazy but trust me on this!
Beer Battered Fish Using Pancake Mix
Ingredients
- 1 to 1.5 pounds firm flaky white fish like cod (I used flounder)
- 1 Cup Bisquick Original Pancake & Baking Mix
- 1 Cup beer
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- salt and pepper to taste
- vegetable oil for frying
Instructions
- Place dry ingredients in a large bowl and mix together. Add in the beer and mix until there are no lumps. If you have a large chunk of fish, cut it up into smaller pieces or if using flounder like I did, I left the skin on and dipped the entire filet into the batter. Either way is fine, it’s totally up to your preference.
- In a large skillet, place 2- 3 inches of oil and let it come up to temperature slowly over medium heat. The oil should be around 350-375 to fry and when you place food in it, it will bubble immediately. Place fish VERY CAREFULLY into the hot oil and let turn golden brown on the first side.
- When the first side is browned, gently turn it over and let brown on the other side. Keep a thermometer out to check the temperature, when it hits around 165 degrees the fish is done. Fish cooks extremely fast and depending on how thick the piece is, it may only take minutes to cook on each side.
- Take it out and lay on a wired rack so the excess oil will drip off. Immediately season with salt. Make sure not to crowd the pan so you might need to fry in batches. Serve with your favorite dipping sauces and wedges of lemon. Enjoy!

I also made a KILLER homemade tartar sauce to go with our little fish fry:
Or, if you prefer cocktail sauce, you can find the recipe for that here!
This beer batter recipe using pancake mix is super light and flavorful. I am definitely going to try it on some chicken tenders next, YUM! I also love that is has so little ingredients, I literally have all the stuff besides fresh fish on hand all the time.
What’s your favorite way to use pancake mix other than pancakes?!
