Today’s recipe for chocolate chip pancakes cupcakes is made with real pancake mix from Bisquick, how cool is that?! I’m sure you already have all the ingredients in your fridge and pantry. They would make such a fun dessert for when you have breakfast for dinner or just as a snack anytime! Pancake mix is loaded with chocolate chips and topped with a super light and fluffy maple buttercream frosting. YUM!

Chocolate Chip Pancakes Cupcakes

YUM, you can even garnish with more chocolate chips or maple syrup! Having Bisquick Original Pancake & Baking Mix on hand will throws these cuties together in a flash. Now you can wow your kiddos with their favorite breakfast food in kid form, awesome!!

Chocolate Chip Pancakes Cupcakes
 
 
Ingredients
  • 2 Cups Bisquick Original Pancake & Baking Mix
  • 2 tsp baking powder
  • 2 Tbls unsalted butter, melted
  • 3 Tbls granulated sugar
  • 1 Cup milk
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 Cup milk chocolate chips mixed with 1 Tbls Bisquick Original Pancake & Baking Mix
  • 1 recipe Maple Buttercream Frosting
Instructions
  1. Preheat oven to 350 degrees. Place dry ingredients except for chocolate chips in a large bowl. In separate bowl, add the eggs and lightly beat them. Add in the milk, butter and vanilla, whisk to combine. In a small baggie, add in the chocolate chips and the additional Bisquick Original Pancake & Baking Mix. Toss to combine, set aside. Pour in the egg mixture into the dry mixture.
  2. With a spoon or whisk, combine but do not over mix. Add in chocolate chips and fold them in. Pour batter a little over half way into cupcake liners.
  3. Bake for 17-19 minutes or until lightly golden brown and a toothpick inserted in the center comes out clean.
  4. Let cupcakes cool in cupcake tin on wire rack for 5 minutes. Take out of tin and let cool completely on wired rack. Top each cupcake with Maple Buttercream Frosting. Garnish with more maple syrup or chocolate chips if desired. Serve and enjoy!

Garnish with more maple syrup or chocolate chips if desired. Serve and enjoy!

    I’ve never thought of making cupcakes with pancake dough. That is brilliant! It would be yummy to do fruit or something like that instead of the chocolate chips.
