Happy June, can you believe it. I’m ready, how about you? Over at Memories by the Mile we have been having some barbecue and healthy, delicious salads. Getting into the spirit of SUMMER! We’re loving it! It’s so fun to be back here with Dana and her readers.
Lemonade is one of my favorite drinks and for me adding fresh raspberries to it and it couldn’t be more perfect! Summertime is the best time of the year to drink a glass of ice cold raspberry lemonade too. The fruit is in season and less expensive and nothing quenches my thirst better than lemonade.
My grandchildren always love a glass of homemade lemonade or raspberry lemonade. I think they love it more because I make it for them, so it’s a special treat. If they get to help squeeze the lemons, better yet. Kids love to help in the kitchen, don’t they? I have found that even the pickiest eater, likes things he or she has had a hand in making.
- 2 cups sugar
- 2 cups water
- 3 lemons
- 1 cup raspberries
- 2 cups cold water
- Simple syrup is easy to make, just bring to boil water and sugar and stir till sugar is dissolved completely. Remove from heat and let cool. (You can make up the simple sugar ahead of time and have in the refrigerator).
- Squeeze lemons into a bowl, trying to keep the seeds out. Place juice from lemon’s into the cooled simple syrup and mix well.
- Blend raspberries in a Ninja or blender and add to lemonade mixture. Then add to cold water and stir. Pour over a glass of ice. Add a thin slice of lemon to the glass and serve.
