Candied Almond Triple Berry Yogurt Parfait

Welcome to a whole new monthly series! Parrish from Life with the Crust Cut Off and I will be sharing one themed recipe a week! For the month of June it is all about the 4th of July! Today I have for you is a fun, delicious and healthy breakfast or snack you can have any time of the day! This would always be an amazing low calorie dessert as well! I love yogurt and yogurt parfaits are always so fun but I really wanted to elevate them to the next level. So, I candied some almonds and added them for a nice crunch to this triple berry yogurt parfait!

Candied Almond Triple Berry Yogurt Parfait, vanilla yogurt layered with fresh berries and homemade candied almonds.

This treat is soooo insanely easy as well. You will be making these all the time and just switching around the fruit, you will never get bored!

Recipe makes ⅓ Cup candied almonds. Per parfait you will only use 2 Tbls of the almonds. Use the rest for more parfaits or as an ice cream or cereal topper! The rest of the ingredients are per parfait.
Ingredients
  • ⅓ Cup sliced almonds
  • 2 Tbls granulated sugar
  • 1 Tbls water
  • ⅔ Cup vanilla yogurt
  • 2 strawberries, diced
  • handful of raspberries and blueberries
Instructions
  1. First you want to make the candied almonds. Preheat oven to 350 degrees. Place sugar and water in a saute pan and allow sugar to melt over medium low heat. Add in almonds and cook until water is evaporated, stirring almond constantly, this takes about 5 minutes.
  2. Place almonds on sheet tray lined with parchment paper or silicone mat. Bake about 5 minutes, just until crisp. DO NOT OVER COOK, keep an eye on these they will burn quickly from the sugar. Take out of oven and allow to cool on the pan. Store in a air tight container until ready for use.
  3. To assemble the parfait, spoon half of the yogurt in the bottom of glass. Place half the berries and 1 tbls of the candied almonds. Spoon all but a dollop of the yogurt on top. Place the remaining berries and 1 tbls.almonds. Add a dollop of yogurt on the very top and garnish with berries and almonds if desired.
  4. Serve and enjoy!

As you can tell, this is super easy to make. The longest part is the almonds and if you make them ahead of time it takes about 3 minutes to throw these together. I hope you enjoyed this fun recipe. I think it would be an amazing 4th of July breakfast to start off with or a beautiful dessert if you’re staying fit for bikini season!

    I’ve never made candied almonds before. I will have to try.
    I’ve been experimenting with overnight oatmeal where you put oatmeal, yogurt, milk, and fruit in a bowl overnight and it’s pretty good. This reminds me of that, only a bit tastier.
