Peanut Butter Chocolate Chip Cookie Bars

OOooh, these peanut butter chocolate chip cookie bars are calling my name! They are so moist, chewy, soft, decadent…. so YUM! I do have to warm you, these are very rich so you definitely need a big glass of milk to wash them down! But, I assure you they are totally worth it!

 

Peanut Butter Chocolate Chip Cookie Bars

These are very similar to the vanilla blondies I made in my Death by Vanilla dessert, but you know with more peanut buttery chocolatey goodness, wow oh wow!

Ingredients

2 1/4 Cup all-purpose flour

1 tsp baking soda

1 tsp salt

1 Cup unsalted butter (2 sticks), softened

3/4 Cup granulated sugar

3/4 Cup packed brown sugar

1 tsp vanilla bean paste (or vanilla extract)

2 large eggs

2 bags peanut butter and milk chocolate chips, mixed

 

Directions

1. Pre-heat oven to 375 degrees.

2. Combine the flour, baking soda and salt. Stir so ingredients are combined. Set aside.

3. In a large bowl beat butter, sugar, brown sugar and vanilla until combined with a hand mixer. Add the eggs one at a time, beating until mixed thoroughly each time. Gradually add the flour mixture to the wet mixture. When this is combined thoroughly add the morsels and stir in with a spoon or spatula.

4. Place mixture into a greased 13x9x2 inch dish. Bake 20-25 minutes, until a toothpick inserted in the center comes out clean (unless you hit a chocolate chip, hehe). Let cool on a wire wrack in the dish.

5. Cut up in bars and enjoy!

    Quick question, this may sound stupid but is it two bags of chocolate chips and peanut butter chips or one bag of each mixed together?

      Definitely not stupid, I should have worded it better. I bought the bags where the peanut butter and chocolate chips are already mixed together. So you can just do like I did and buy those pre-mixed bags or get one peanut butter bag and one chocolate chip bag. Hope that makes sense!
