Slow Cooker Ginger Chicken

Welcome back to this week’s slow cooker recipe!! If you weren’t aware, Parrish from Life with the Crust Cut Off and I are posting one slow cooker recipe a week for the whole month of September! You guys are so lucky! *tee-hee* The recipe I’m sharing for this week is slow cooker ginger chicken. OH YES.

This recipe was adapted from A Year of Slow Cooking.

Ingredients

This recipe is good for 12 thighs or 6 breasts or any combination.

1 Cup                             brown sugar

3/4 Cup                        lemon-lime soda

3/4 Cup                        white vinegar

4 each                           garlic cloves, minced

3 Tbls                            soy sauce

t tsp                               fresh ground black pepper

1 Tbls                            fresh ginger, minced, skin removed

1 tsp                               black soy sauce (optional)

Directions

Mix all the ingredients except for the chicken together in a bowl. Pour 1/4 of the sauce into your crock pot. Put the chicken in the crock pot and pour the rest of the sauce on top. You can mix this around some to make sure all the chicken is coated in the sauce.

Let this cook on low heat for 6-8 hours or high heat 4-6 hours. When its done cooking, take out the chicken and set aside. Place the sauce in a sauce pot over medium high heat and thicken with a cornstarch slurry (equal parts cornstarch and water mixed) until your desired thickness. Serve over rice with extra sauce on top! YUM!!

I just made some rice, put some butter, salt and pepper on it and mixed some peas in. Man oh man this is good eating!

    This looks delicious! I love chicken and I love ginger…how could it get any better? I do have a question though; what is “black” soy sauce? Is it available in a regular grocery store or would I need to go to an Asian market?

      Asian market is your best bet. I have never seen it in grocery stores around me but you might be lucky! It is labeled as black mushroom soy sauce.
