Horseradish Chicken Salad

Horseradish Chicken Salad Recipe from ThisSillyGirlsLife.comHey peeps! Today’s recipe is the perfect lunch (or dinner)! I just add a slight twist to the traditional chicken salad by adding horseradish. It gives it a nice kick and is a great compliment!

Ingredients:

2 ea                     Chicken Breast

2 ea                     Chicken Thigh

2 ea                     Stalks Celery

1/2 Cup               Mayo

1 Tbls                  Vinegar

1 tsp                    each: onion powder, garlic powder

1/4 tsp                 Paprika

1 Tbls                  Roasted Garlic Mustard, or you can use dijon or your favorite mustard

1 tsp                    Prepared Horseradish, the finest grated kind (DO NOT get “horseradish sauce” in the condiment aisle. Some grocery stores have the prepared horseradish in the condiment aisle but most I have seen have it near the seafood in an open refrigerator.)

Salt and Pepper to taste

 

Preheat oven to 400 degrees. I use a whole chicken and take off the legs and the wings, leaving the rest of the body in tact. I roast this plain for around 45 minutes in the oven. Take out the oven and make sure it is cooked all the way through, a temperature of at least 165 when tested in the thickest part or the breast. Let it cool completely.

Cut the celery in a fine dice.

Next, cut up the chicken in medium sized chunks, make sure you don’t have any bones.

Now, mix up the dressing for the salad. Place all the remaining ingredients in a bowl and whisk together.

Mix all the components together and let refrigerate for a few hours to let the flavors combine. Enjoy! This is super flavorful and has a great crunch from the celery. Feel free to add additional ingredients! Thanks for reading!
